Pan Seared Salmon with Caramalised Onions and Citrus Glaze

Ingredients to make Pan Seared Salmon with Caramalised Onions and Citrus Glaze

  • 4 Salmon fillets
  • Salt to taste
  • 1 tsp black pepper powder
  • 1 tsp Lemon juice
  • 1 tsp Ginger garlic paste
  • A pinch of saffron
  • 2 tbsp olive oil
  • 1 cup orange juice (for the glaze)
  • Zest of half orange (for the glaze)
  • 1/2 cup lemon juice (for the glaze)
  • 1 tbsp vinegar (for the glaze)
  • 1/4 cup brown sugar (for the glaze)
  • A pinch of salt (for the glaze)
  • 2 garlic cloves (for the glaze)
  • 1 big onion, sliced
  • 2 tsp oil (for onions)
  • Parsley leaves, as required for garnishing
  • 1/2 tsp Dried oregano for garnishing

How to make Pan Seared Salmon with Caramalised Onions and Citrus Glaze

  1. Marinate the salmon fillets with salt, pepper, ginger-garlic paste,saffron and lemon juice for 3o minutes.
  2. Take a small pan. Add 2 tsp oil and add the sliced onions. Fry well till golden and caramelised. Keep aside.
  3. Heat a grilling pan. Add oil and grill the salmon on high heat for few minutes on both sides till done.
  4. Pour all the ingredients for the glaze in a sauce pan and bring it to a boil stirring continuously. Cook for a minute. Remove the garlic cloves before serving.
  5. To serve, take a plate, place the grilled salmon and garnish with parsley leaves and caramelised onions. Pour a little of the citrus glaze on top of the salmon. Sprinkle oregano on the fish. Serve immediately.

My Tip:

Make the citrus glaze towards the end as it might turn bitter if kept unused for a long time.
