ABOUT Batata Vada - Mumbai Style RECIPE

Batata vada is a popular snack in Maharashtra. They are generally boiled and mashed potatoes, coated in chickpea batter and deep fried. Great as an evening snack and it is also a street food, often served in pav (bread), called vada pav. Tastes absolutely delicious with green chutney or any sauce.

Ingredients Serving: 4

  1. Stuffing -
  2. 4-5 potatoes, boiled & mashed
  3. 1 tsp. ginger, grated
  4. 2 green chilies, chopped
  5. 1/4 tsp. turmeric powder
  6. salt to taste
  7. 1/2 tsp. red chili powder
  8. 1 tsp. coriander-cumin powder
  9. 2 tbsp. coriander leaves, chopped
  10. oil to deep fry
  11. Batter -
  12. 1 cup besan (chick pea flour)
  13. salt to taste
  14. 1 tbsp. hot oil
  15. 1/4 tsp. turmeric powder
  16. 1/2 tsp. red chili powder
  17. 1 tsp. coriander-cumin powder
  18. pinch of baking soda
  19. 1 tsp. kalonji (nigella seeds)
  20. water as required

Instructions

  1. To make the batter, combine all the ingredients in a bowl and make a smooth batter with the help of some water. It should be of pouring consistency. Keep aside.
  2. For the filling, combine all the ingredients in a bowl, except oil. and knead into a dough. Make equal sized balls out of it.
  3. Heat oil. Dip each ball in the batter and deep fry them few at a time till golden brown on all sides. Drain on a paper tissue and serve with any chutney or sauce.
