ABOUT Nolin Gurer Payesh (Rice Kheer with Date Palm Jaggery - Bengali Style) RECIPE

Bengali Nolin Gurer Payesh or Rice Kheer with Date Palm Jaggery is one of the delicious dessert in Bengal. It is also known as Khejur Gurer Payesh in Bengal. It is made of date palm jaggery instead of sugar which gives this kheer different flavour and taste. Nolin Gur is available in the market in the winter season. For this reason, it is made specially in the festival of "Poush Parbon" in Bengal which falls at the end of the Poush month according to the Hindu calendar (middle of January month). Different types of Pithe, Puli and specially Nolin Gurer Payesh are made in this festival. All the members in my family just love this dessert. You must try this mouth watering dessert.

Ingredients Serving: 6

  1. A handful of Gobindo bhogh rice
  2. 1 liter full cream milk
  3. 200 gram grated Nolin Gur or Dates Palm Jaggery
  4. 25 gram chopped cashew nuts
  5. 25 gram raisins
  6. 2 Bay Leaves
  7. 1/4 tsp green cardamom powder (optional)

Instructions

  1. Wash and soak the rice in water for half an hour.
  2. Take a thick bottomed saucepan. Add milk in it on a high heat.
  3. When it starts to boil reduce the heat to medium and add bay leaves.
  4. Boil the milk till it reduces to 3/4 of its quantity and then add the soaked rice after draining the excess soaking water.
  5. Stir occasionally that the rice doesn't get stuck at the bottom of the pan.
  6. After the rice is cooked add the grated nolin gur or dates palm jaggery and turn off the gas immediately.
  7. Now mix till jaggery dissolves in the payesh.
  8. Add cardamom powder and mix well.
  9. Add dry fruits.
  10. Garnish it with some dry fruits and serve at room temperature.
