Cinnamon Spiced Curried Apple Soup

Ingredients to make Cinnamon Spiced Curried Apple Soup

  • 2 apples peeled and diced
  • 1/2 Onion chopped
  • 1 clove garlic minced/sliced
  • 2 cups water/chicken/veg stock
  • 1/2 tsp Curry powder
  • Dash of cinnamon powder
  • 1/2 cup coriander/cilantro leaves
  • Salt and black pepper powder taste
  • 1/4 to 1/2 cup full cream
  • Juice of 1/2 Lemon
  • Few dried cranberries/diced apples for garnish
  • 1 tbsp olive oil

How to make Cinnamon Spiced Curried Apple Soup

  1. Heat oil in pan. Add garlic and onions. Once onions are translucent, add apples and cook on low heat.
  2. Add curry powder and water/stock. Bring it to a simmer and cook till apples are mushy. Roughly 20-30 minutes.
  3. Add dash of cinnamon. Cool thoroughly. Puree the mixture along with coriander leaves and cream till smooth. If desired, sieve the mixture.
  4. Add lemon juice, salt and pepper to taste. Chill in refrigerator for atleast an hour.
  5. Ladle in individual bowls and garnish with cranberries or diced apples with a spot of cream. Sprinkle cinnamon powder.

My Tip:

If you want to avoid full cream, then consider adding half-and-half (milk+cream).
