ABOUT NENDRAN PAZHAM / SWEET BANANA CUTLET RECIPE

A sweet cutlet to enjoy your evening tea, a crispy cutlet loaded with nuts, coconut gratings and ripe nendram pazham. Try out this nendram pazham /sweet banana cutlet.

Ingredients Serving: 10

  1. Ripe banana / Nendran pazhamcooked and mashed - 2 nos large sized
  2. Rice flour - 1tbsp
  3. Maida - 4 tbsps
  4. Ghee - 3 tbsp
  5. Cashew nuts - 20 nos
  6. Raisins- 20 nos
  7. Grated Coconut - 1 cup
  8. Sugar - 1/4Cup
  9. Honey - ¼ cup
  10. Cardamom powder- 1 tsp
  11. Bread Crumbs - 1 cup
  12. Milk mixed with 2 tbsps of maida and a pinch of cardamom powder - ½ cup
  13. Oil - for deep frying

Instructions

  1. Steam cook the ripe banana along with the skin.
  2. Peel off the skin,and mash them well.
  3. Add rice flour, maida and mix well and keep aside
  4. Heat ghee in a pan and fry cashew nuts and raisins.
  5. Add coconut, sugar, honey and cardamom powder and sauté for few minutes.
  6. Add banana-rice dough and mix well and remove from flame.
  7. Allow it to cool and take medium sized balls from banana mixture, and flatten like cutlets.
  8. Dip in milk maida batter and roll in bread crumbs.
  9. Heat oil in a pan. Drop gently the cutlets till they become golden brown on both sides.
  10. Delicious Nenthra pazham cutlets are ready to serve.
  11. Serve hot.
