ABOUT Irish Chocolate Potato Cake RECIPE

This is without doubt my best whole wheat based chocolate cake recipe. The starchy potatoes not only give the cake a beautiful structure but also keep it soft and moist.

Ingredients Serving: 5

  1. Cold potato puree - 1/2 cup [see preparation in steps]
  2. Whole wheat flour 1 1/2 cups
  3. Baking powder 1 1/2 tsps
  4. Baking Soda - 1/2 tsp
  5. Cocoa powder - 3 tbsp
  6. Custard powder - 1 tsp
  7. Milk (Divided) - 1 cup and 1 tbsp
  8. Honey - 1 tbsp
  9. Powdered sugar (Divided) - 1/2 cup and 2 tbsp
  10. Cooking oil - 1/3 cup
  11. Vanilla essence - 1 tsp
  12. Substitute for 1 egg : [to be mixed just before adding]*
  13. 1 1/2 tsp cornflour
  14. A pinch of baking soda
  15. A pinch of baking powder
  16. 2 tbsp water

Instructions

  1. Potato puree preparation - Pressure cook 1 large potato upto 4-5 whistles. Allow to cool completely. Peel and mash it roughly. Pulse it in an electric mixer to get rid of any lumps. Refrigerate the sticky potato puree. Use 1/2 cup of this.
  2. Preheat oven at 180 degrees centigrade for 10 minutes.
  3. Sieve the flour, baking powder, baking soda, cocoa powder and custard powder together 5-6 times. This helps to aerate the mixture and combine the ingredients uniformly.
  4. In a large bowl beat the oil and sugar together.
  5. Add the honey, egg substitute and vanilla essence. Mix well.
  6. Stir in the potato puree. Add the milk and beat/whisk well for 5 minutes.
  7. Fold in the sifted flour until no lumps remain. Spoon the batter into a greased and lined baking dish. [8 inch round tin]
  8. Smoothen the top with a spatula.
  9. Bake in the pre heated oven at 180 degrees for 30-35 minutes or until skewer inserted comes out clean.
  10. Invert over a wire rack after 10 minutes.
  11. Allow to cool completely before slicing.
