ABOUT GAJAR KA HALWA RECIPE

Gajar ka halwa is the most popular indian traditional dessert made during the winter months. This desret is mainly prepared from grated carrots with milk, nuts, sugar, poppy seeds and mawa/khoya

Ingredients Serving: 7

  1. 1kg of carrots
  2. 500 ml milk
  3. 1cup fresh milk cream
  4. 2tsp cardamom powder
  5. 2-3tbsp Poppy seeds
  6. 50g almonds
  7. 4-5 tbsp ghee
  8. 50g cashew nuts
  9. ,60-70gm sugar

Instructions

  1. MISE EN PLACE- Carrots- Wash-pat dry- peel and grate Milk- Cook it on slow flame until 20-30% reduced Almonds— Roughly chopped or coarsly grinder Milk— Boiled and preferably 20% reduced.
  2. Cooking Time— Heat 4-5 tbsp of the ghee in a pressure cooker on medium heat. Add the grated carrots and stir . Cook it on high flame for 2-3 min.
  3. Add poppy seeds, mix it well.
  4. Cover the cooker with lid and allow 2 whistles. Open the pressure cooker add milk, leave it to boil and cook it for 3-5 min.
  5. Now again cover the cooker with lid and allow 2-3 whistles.
  6. Open the cooker add chopped nuts , cream and cardamom powder. Mix it all well.
  7. Cook the carrots in slow to medium flame till milk is completely evaporated keep stirring in between.
  8. Lastly add sugar and cook till halwa leave the sides and ghee starts to separate.
  9. Garnish it with your preferred nuts serve hot or as preferred.
