ABOUT Pulihora Rice RECIPE

Puliyodarai (Puli means Tamarind in Kannada,Telugu and Tamil ), Pulihora, Puliyogare or simply Tamarind Rice is a common rice preparation in the South Indianstates of Andhra Pradesh, Telangana, Karnataka and Tamil Nadu.As Hindus consider turmeric powder a symbol of auspiciousness, Pulihora is usually cooked on special occasions and festive days. It is presented to God as part of prayers also given as prasadam in some temples; devotees queue to get Pulihora after darshana..

Ingredients Serving: 4

  1. Cooked cold rice ( or leftover rice) 3 cups
  2. One cup of tamarind soaked inwater for 30 min
  3. Turmeric powder 1 tsp
  4. Chana daal 2 tsp
  5. Peanuts 2 tsp
  6. Curry leaves few
  7. Dry red chilly 2
  8. Hing pinch
  9. Salt to taste
  10. Watet 1 cup
  11. Oil 2 tsp
  12. Mustard seeds 1 tsp
  13. Cumin seeds 1 tsp

Instructions

  1. Here I have used leftover rice..However you can make rice fresh and cool it..So that each grain are separate
  2. Blend tamarind properly in a bowl..And seive the juice from it in a glass bowl.
  3. Heat oil in pan..Add cumin and mustard seeds..Once they crackle..Add chanadaal and peanuts and roast till they have become brown in colour
  4. Then add hing,turmeric,curry leaves,dry red chilly and mix well...
  5. Finally add 1 cup of tamarind juice , 1 cup water and little salt, boil for about 10 min so that daal and peanuts become soft and tender.
  6. You can store the above mixture for 7 days and mix it with rice whenever you have leftover rice
  7. Now add the cooked rice in tamarind masala mixture and mix well so that all the taste of tamarind masala blends properly with rice..
  8. Now off the gas and serve..
  9. This tamarind rice is best served during festival prasad or you can carry it while travelling as due to sourness,its chances of spoiling is very little..
