ABOUT Creamy Potato Salad with Mint RECIPE

Purple and golden yellow beauties are dunked in mayonnaise.

Ingredients Serving: 3

  1. Purple potato - 225 gms
  2. Yellow potato - 225 gms
  3. Mayonnaise - 4 tbsp
  4. Garlic and parsley powder - 1 tsp
  5. Yellow/Black mustard seeds freshly crushed - 1/2 tsp or less or Dijon mustard - 2 tsp
  6. Whole black pepper corn crushed freshly - 1/2 tsp
  7. Mint leaves 5-6 leaves roughly torn with hand
  8. Lemon - 1/2 of 1 (Juice)
  9. Salt to taste

Instructions

  1. Steam the potatoes until a knife can be inserted not mushy. When it cools carefully peel and cut into bite size pieces. (I find that steaming potatoes retain their shape boiling them makes it mushy purple one especially.
  2. Mix mayo, mustard, pepper, mint leaves and salt together until everything is well combined. Add the potatoes and gently stir until potatoes are almost coated.
  3. Refrigerate for an hour and serve as a side dish for spicy meat dishes and barbecues.
