Ingredients to make Irish Barmbrack | Irish Speckled Loaf

  • 1 ¾ cup brewed black tea, cold
  • 1 cup sugar plus 1 tablespoon to sprinkle
  • 1 cup golden raisins
  • ½ cup black currants
  • ¼ cup chopped candies peels or glazed cherries
  • 1 large egg
  • 1 ¼ cup All-Purpose Flour
  • 1 ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon all spice or (¼ teaspoon each of ground cloves, cinnamon, nutmeg)

How to make Irish Barmbrack | Irish Speckled Loaf

  1. In a large bowl, take tea, raisins, currants, peels and sugar. Cover and keep overnight.
  2. Grease and line one 8 inch round cake pan. Preheat oven to 180 degrees C.
  3. Whisk together last four ingredients.
  4. Add flour mix to liquid ingredients. Beat in the egg.
  5. Pour batter into the prepared pan. Sprinkle sugar evenly on the batter. Bake for 1 hour or till a toothpick inserted in the center comes out clean.
  6. Remove from the oven after 5 minutes. Cool in the rack.
  7. Cut thick slices. Butter the slices and serve with tea

My Tip:

Add dry fruits of your choice. Besides raisins, you may add prunes, apricots etc.
