Absolutely delicious twist to a classic Au Gratin with some amazing Indian flavours. Inspired by the spice loving husband!

Ingredients Serving: 6

  1. Potatoes - 3 large
  2. Carrots - 2 large
  3. Onion (chopped)- 1 medium
  4. Green Pepper/Capsicum (chopped)- 1 medium
  5. Ginger garlic paste 1 tbsp
  6. Jalapeno/Serrano chilli (chopped) – 1 no.
  7. Marinara Sauce/Crushed tomatoes – 2 cups
  8. Bechemel sauce – 1 cups
  9. Curry Powder or Garam Masala – 1 Tbsp
  10. Coriander powder – 2 tsp
  11. Turmeric Powder – 1/4 tsp
  12. Salt & Pepper – to taste
  13. Red Chilli powder – 1 1/2 tsp (or to taste)
  14. Cilantro/Coriander leaves (chopped) – 1/4 cup (divided)
  15. Cheese – 1/2 to 3/4 cup (use a mix of cheddar and mozzarella)
  16. Parmesan cheese – 2 Tbsp
  17. Breadcrumbs – 1/4 cup
  18. Butter/Olive oil – 1 Tbsp plus 1 Tbsp

Instructions

  1. Slice the potatoes and carrots thin (about 1/8 inch) using your mandolin or knife. Boil the potatoes and carrots separately until tender, but not too mushy. Use turmeric powder while boiling potatoes. Drain and set aside.
  2. Prepare the bechemel white sauce as per your favorite recipe or use store bought white cheese sauce.
  3. Meanwhile, heat 1 Tbsp of butter or olive oil in a pan and add in the ginger, garlic and jalapeno. Saute for a minute. Then add in the onions and saute until they are soft and translucent.
  4. Stir in the coriander powder, red chilli powder and curry powder and saute for just about 30 seconds, until aromatic. Add in the marinara sauce or crushed tomatoes and cook, covered for 8-10 minutes. Season with salt and pepper to taste.
  5. Finish the sauce with 2 Tbsp of chopped coriander leaves.
  6. Preheat the oven to 200 degree centigrade.
  7. Mix the tomato gravy and the white sauce together.
  8. Mix together the breadcrumbs, remaining cilantro and Parmesan cheese in a bowl and keep aside
  9. Grease a 9 by 9 inch casserole/baking dish with a little butter. Make a layer of the potatoes on the bottom. Top with 1/3 of the gravy. Layer the carrots on top and spread the next 1/3 of the gravy.
  10. Make another layer with rest of the potatoes and top with the leftover gravy.
  11. Sprinkle the breadcrumbs mixture on the top. Add the cheese on top of the breadcrumbs and cover the casserole snugly with aluminum foil.
  12. Bake in the center of your oven for 45 minutes. Then remove the aluminum foil and bake for another 5 minutes.
  13. Serve hot or warm as a sidedish. We eat this with dinner rolls like a sandwich to make it a meal.
