Savoury Meatloaf Muffins

Ingredients to make Savoury Meatloaf Muffins

  • 250 gm mutton mince
  • 2 medium onions finely chopped
  • 1 tomato finely chopped
  • 2 tablespoons ginger garlic paste 2
  • 1/4 cup cooking oil
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely red and yellow, capsicum
  • 1/4 cup boiled elbow macaroni
  • 1/8 cup boiled fresh green peas
  • 1/4 teaspoon turmeric powder (optional)
  • 1 teaspoon seven spice powder ( or garam masala )
  • 1/2 teasoon garlic powder
  • 1/2 Italian herbs mix
  • 2- 3 teaspoon freshly ground coriander powder
  • 1/2 tsp Cumin powder
  • 1 teaspoon tsp oregano powder
  • 2 large eggs
  • 2 green chillies
  • 1/4 cup coriander leaves finely chopped
  • Salt to taste
  • Cooking oil spray

How to make Savoury Meatloaf Muffins

  1. Heat oil and saute onions
  2. Then add mince, salt , turmeric and green chillies. Saute for 5 minutes
  3. Add ginger - garlic paste, saute for a minute and add tomatoes. Saute nicely for 5 minutes.
  4. Now add 2 tsp coriander powder and 1/2 tsp seven spice powder
  5. By now the mince would have been cooked and changed to a brown colour
  6. In another bowl combine the boiled macaroni, capsicums, carrot, boiled peas, salt to taste, half teaspoon seven spice powder , italian herbs mix, garlic powder, oregano and coriander leaves. Tip in the 2 eggs and mix nicely
  7. Combine this mixture with the mince and mix nicely.
  8. Spoon the mince mixture into 6 muffin cups coated wth cooking oil spray
  9. Bake in a preheated oven at 2oo degrees Celsius for 30 minutes
  10. After 30 minutes if toothpick comes out clear from the muffin then it is done
  11. Seve hot with salsa, tomato ketchup or mayonnaise.

My Tip:

Vegetarians can use soyabean granules instead of mince. Halfway through the baking you could sprinkle cheese on the muffins.
