Ingredients to make Sorse Baigan (Mustard Brinjal)

  • Brinjal 10 (small size)
  • Black Mustard paste 4 tbsp
  • Salt as per taste
  • Turmaric 1 tsp
  • Curd 1 tsp
  • Green chili paste 1/2 tsp
  • Oil 6 to 7 tbsp
  • Panchforan 1/4 tsp

How to make Sorse Baigan (Mustard Brinjal)

  1. Cut brinjal with stem by sliting it like a cross sign.
  2. Heat a pan and add oil. After the oil heats up add the brinjal and fry slowly.
  3. After the brijals are fried, remove from flame and keep aside.
  4. In the same pan add panchforan and green chilies. Add mustard paste, salt and curd. Stir it for a few minutes. Put 1 cup water. After few minutes add brinjals and mix till required consistency is gained.
  5. Serve hot with rice.
