ABOUT Bengena Koni Bhaji/ Eggplant With Egg RECIPE

Bengena koni bhaji is an assamese dish of eggplant (brjnjal ) with egg. This is a very simple and easy recipe with few ingredients with minimum spices. It is a soul food and one of the soul satisfying dish in an assamese thali.

Ingredients Serving: 4

  1. 500 gms Eggplant
  2. 3 Eggs
  3. 1 large Onion sliced
  4. 1 tsp Paanch puran
  5. 1 tsp Turmeric powder
  6. Salt to taste
  7. 3 tbsp Mustard oil

Instructions

  1. Heat oil in a pan. Add the Paanch puran and let it crackle.
  2. Add the onions and saute until golden brown.
  3. Add the eggplant, turmeric powder and salt to taste. Mix well and cook over high heat for 8-10 mins stirring frequently.
  4. Reduce the heat, cover the pan with lid and simmer for 8-10 mins until the eggplant becomes translucent stirring in between.
  5. Add the eggs and mix well and incorporate them nicely. Cook over high heat for 5-6 mins stirring frequently.
  6. When the oil starts to separates take off the flame and enjoy.
