Ingredients to make Kung pao potatoes

  • 4 large : Potatoes, par boiled, peeled and cubed
  • Few sprigs Green onions chopped
  • 1 small onion sliced
  • Few juliennes of Mixed peppers
  • 2 tbsp Oil
  • An inch piece Ginger chopped
  • 4 garlic cloves chopped
  • 2 tsp Corn flour
  • 1 cup vegetable stock
  • 2 tbsp chilli oil
  • 2 dry red chillies broken to pieces
  • 2 tbsp Soy sauce
  • 1 tbsp Red chilli sauce
  • 2 tsp sugar
  • Salt to taste
  • 3 tbsp roasted peanuts

How to make Kung pao potatoes

  1. Dilute the corn starch with couple of spoons of vegetable stock n set aside until use...
  2. Heat oil in a non-stick pan. Add cubed potatoes. Shallow fry till light golden. Drain on absorbent paper.
  3. Heat chilli oil in another non-stick pan. Add red chillies and saute for a minute or so. Now stir in the sliced onion,peppers, ginger and garlic and saute till soft. Add soy sauce, red chilli sauce, sugar, salt and peanuts and give it a good mix.
  4. Now stir in the vegetable stock n bring this to a gentle boil n later stir in the corn starch mixture n cook until slightly thick..
  5. Add fried potatoes and mix gently. Sprinkle the chopped green onions and serve hot ..

My Tip:

For extra crispy potatoes dust the cubes with a tsp of corn starch ..leave for a couple of mins and then fry ..
