Baked egg Potato

Ingredients to make Baked egg Potato

  • Boiled potatoes - 2 medium to large
  • egg yolk - 2
  • Oregano as per choice
  • Black pepper as per taste
  • red chilli powder or chilli flakes as per taste
  • For batter:
  • 1 tsp mayonnaise
  • 1/2 tsp cream cheese
  • Finely chopped onion 1
  • Finely chopped green bell pepper 1
  • Some sweet corns 1

How to make Baked egg Potato

  1. Cut the boil potatoes in 2 halves
  2. Scoop out from in side to make it like a bowl
  3. Sprinkle some oregano, black pepper and chilli on it.
  4. Put an egg yolk in each bowl in the potato.
  5. Sprinkle some oregano, chilli and black pepper.
  6. Keep it in an oven to bake for 15 - 20 minutes at 150 degree centigrade temperature.
  7. After that take it out and allow it to cool for 10 minutes.
  8. Mix mayonnaise and cream cheese. Add oregano, black pepper and a pinch of powdered sugar. Add onions, bell pepper and corn. Mix it thoroughly.
  9. Put this mixture on top of the baked potatoes and sprinkle oregano.
  10. Yummy baked potatoes are ready to eat.

My Tip:

You can add anything you want like cheddar cheese, mozzarella cheese or some chicken pieces etc instead of onions, corn and bell pepper.
