Shahi bharwan dum aloo

Ingredients to make Shahi bharwan dum aloo

  • 12-15 pieces of baby potatoes half boiled , peeled and scooped
  • For the stuffing-
  • 2 tbsp mawa
  • 2 tbsp finely chopped dry fruits like kaju , pista , badam and kishmish
  • 1 tsp finely chopped ginger
  • 1 tsp finely chopped green chillies
  • Salt to taste
  • Pinch of elaichi powder
  • For the Gravy-
  • 1 tbsp ghee
  • 4 tbsp tomato paste , for this grind the tomatoes and cook them without oil
  • 1 tsp ginger green chillies paste
  • 1 tsp redchilly powder
  • 1 tsp dhania powder
  • Pinch of haldi powder
  • 2 tbsp kaju and magaz ka paste
  • Salt to taste
  • 1 tsp kasoori methi
  • 1 tbsp cream or malai
  • Some water to adjust the consistency

How to make Shahi bharwan dum aloo

  1. FOR THE STUFFING- Mix all the stuffing ingredients in a mixing bowl
  2. Fill all the potatoes with the stuffing
  3. FOR THE GRAVY-
  4. Heat ghee in a pan and put Ginger, green chillies paste.
  5. Saute for a while , then add haldi ,Red chilly powder and Dhania powder , saute a little.
  6. Then add tomato paste.
  7. Cook until the oil comes out.
  8. Then add kaju magaz ka paste.
  9. Mix nicely.
  10. Then add the stuffed potatoes.
  11. Add some water and salt to taste.
  12. Cover and cook on low heat.For 10 minutes.
  13. Then add cream or malai.
  14. Sprinkle kasoori methi , mix well.
  15. Take out in a serving bowl
  16. Serve hot with any type of Indian bread like roti , parantha.

My Tip:

Use fresh mawa , do not over boil the baby potatoes. Cook on low heat only.
