ABOUT Leftover Mashed Potato Cheddar Ranch Cakes RECIPE

What is one to do when left with a bowl full of mashed potatoes? Add just a few staple ingredients, mix it all together, form into cakes and fry it up! Serve to everyones delight! They taste just Yum!

Ingredients Serving: 8

  1. Leftover mashed potatoes, cold 1 and 3/4 cup
  2. All-purpose flour 1/3 cup + 3 tbsp for coating
  3. Dry Ranch seasoning mix 1 tbsp
  4. Freshly shredded sharp cheddar cheese 2/3 cup
  5. Salt 1/2 tsp
  6. Black pepper 1/4 tsp

Instructions

  1. In a large mixing bowl, stir together mashed potatoes, Ranch seasoning mix, salt and pepper.
  2. Add flour and cheddar and stir until all flour is incorporated.
  3. Using a regular size ice cream scoop, form 8 balls of dough. Roll each one in additional flour, gently flattening into thick patties.
  4. Cut out desired shape using a cookie cutter.
  5. In a large skillet, heat 2 tablespoons of olive oil on medium heat.
  6. Fry each cake on one side for about 3 minutes, until golden brown. Flip and fry the other side.
  7. Remove onto a cooling rack or paper towel lined plate.
  8. Cool slightly and serve.
