ABOUT Duchess Potatoes / Pommes Duchesse RECIPE

Duchess Potatoes consists of a Purée of mashed potatoes, egg yolk, cream, butter, salt, pepper & nutmeg.Its famous in french cuisine.

Ingredients Serving: 3

  1. Russet Potatoes -5 medium size
  2. Egg Yolks -3
  3. Heavy cream 1/2 cup + 2 tbsp
  4. Salt - to taste
  5. Unsalted Butter - 50 gm ,softened
  6. Pepper powder -1/2 tsp
  7. Nutmug powder - 1/8 tsp
  8. Egg -1

Instructions

  1. *Peel and diced the potatoes.Boiled it until the fork tender.In a bowl add the cooked potatoes mash it well without any lumps using a masher.
  2. Add the 1/2 cup Cream salt, pepper powder, nutmeg powder,Softened butter,Mix it well.Then add the egg yolk, combine it well using a spatula.
  3. Line a parchement paper in a baking tray.Now transfer the mixture to a piping bag and pipe through a star tip in a circular and upward spiral motion. Keep the piped potatoes in a fridge for 30 mins.
  4. Preheat the oven at 180 °C.Now mix the egg and 2 tbsp cream.Take out the piped potatoes from the fridge and lightly brush with egg & cream mixture.
  5. Bake it 20 mins until golden brown around the edges.
