Duchess Potatoes / Pommes Duchesse

Ingredients to make Duchess Potatoes / Pommes Duchesse

  • Russet potatoes -5 medium size
  • egg Yolks -3
  • Heavy cream 1/2 cup + 2 tbsp
  • salt - to taste
  • Unsalted Butter - 50 gm ,softened
  • pepper powder -1/2 tsp
  • Nutmug powder - 1/8 tsp
  • egg -1

How to make Duchess Potatoes / Pommes Duchesse

  1. *Peel and diced the potatoes.Boiled it until the fork tender.In a bowl add the cooked potatoes mash it well without any lumps using a masher.
  2. Add the 1/2 cup Cream salt, pepper powder, nutmeg powder,Softened butter,Mix it well.Then add the egg yolk, combine it well using a spatula.
  3. Line a parchement paper in a baking tray.Now transfer the mixture to a piping bag and pipe through a star tip in a circular and upward spiral motion. Keep the piped potatoes in a fridge for 30 mins.
  4. Preheat the oven at 180 °C.Now mix the egg and 2 tbsp cream.Take out the piped potatoes from the fridge and lightly brush with egg & cream mixture.
  5. Bake it 20 mins until golden brown around the edges.

My Tip:

*Dont skip the nutmeg, its essential in french cuisine.
