Yakhni Gosht Pulao

Ingredients to make Yakhni Gosht Pulao

  • 750 gms Basmati pulao rice or tukda basmati rice
  • 650 to 750 gms mutton
  • 250 gms chana dal
  • Half kg potatoes
  • Half kg onions
  • 200 GM Curd
  • 2to3 tblspoon ginger garlic paste
  • 3-4 green chillies and corriander
  • Salt to taste pepper nd garam masala powder
  • Condiments : whole cardomom black n green few ,bay leaves,cinnamon sticks 2-3,Cloves ,Black pepper whole few
  • Nutmeg, mace and badaam phool
  • Oil to fry potatoes and saute onions
  • Ghee for pulao
  • Water enough to cook rice

How to make Yakhni Gosht Pulao

  1. Clean mutton and keep aside, apply salt, ginger- garlic paste and add curd to this.
  2. Soak chana dal and keep aside.
  3. Now chop onions finely and keep aside.
  4. Peel potatoes cut in to two halves.
  5. Heat oil in a pan and fry the potato halves golden remove and keep aside.
  6. Now in this oil saute onions till they brown a little, add mutton marinade to cook ( can cook mutton in pressure cooker too for quick and easy tender mutton).
  7. Do not over cook mutton as some bit tenderizes in the pulao too.
  8. Take a pot to cook pulao heat some ghee or oil as preferred drop your green chillies, slit whole masalas, bay leaves and also add one onion chopped.
  9. Saute all, add your cooked mutton, chana dal fried potatoes and washed rice adding enough water as per measure.
  10. Cook on high flame for 5min, now slow stove for ten min and put on a tava/griddle on gas.
  11. Keep for 5 to ten min put off stove and serve hot with chutneys, raitas or plain curd and papad .
  12. Enjoy!

My Tip:

Take care of whole masalas taken as they give the flavour. Do not over cook mutton.
