Ingredients Serving: 10

  1. Ragi / finger millet flour 1/2 cup
  2. Whole Wheat Flour 1 cup
  3. Custard Powder 2 Tablespoons
  4. baking powder 3/4 teaspoon
  5. Vanilla essence 1/2 teaspoon
  6. Honey 1/2 cup
  7. Ghee melted at room temperature 1/4 cup
  8. Milk 1/4 cup or as required

Instructions

  1. Take 1/2 cup fingermillet flour in a wide bowl .
  2. Add 1 cup whole wheat flour .
  3. Add 2 tablespoons custard powder .
  4. Add 3/4 teaspoon baking powder .
  5. Add 1/2 teaspoon vanilla essence .
  6. Add 1/4 cup melted room temperature ghee .
  7. Add 1/2 cup honey.
  8. Mix all together . Could see a crumbled dough . Add 1/4 cup milk gradually to moisten the flour .
  9. Spread a plastic sheet on a flat surface .
  10. Transfer the moist flour to the sheet . Keep gathering the flour to a smooth dough . Don’t knead .
  11. Add milk if required . Gather to a log . Tightly wrap it in a plastic sheet .
  12. Put the wrapped log in the fridge . Refrigerate for 30 to 40 minutes .
  13. After 40 minutes , unwrap the log . It’s set perfectly .
  14. Slice the log into equal sized biscuits .
  15. Place a tawa on the stove top . Line an aluminum thick foil on the tawa .
  16. Take a lid . Seal the lid with aluminum foil to lock moisture .
  17. Place the biscuits on the tawa ( on aluminum sheet ). Cover with the sealed lid .Bake in low for
  18. 25 minutes or until biscuits turn light brown . Crunchy Ragi Custard Biscuits are ready.
  19. Cool them completely .
  20. Serve these Tawa Ragi Custard Cookies. Enjoy.
