Ingredients to make Steamed chicken and rice parcels with spiced honey

  • 3/4 cup cooked rice
  • 1/2 cup minced chicken
  • 1 tsp dark soya sauce
  • 1 tbsp chopped spring onion (white part)
  • 1 tbsp finely chopped fresh Coriander leaves
  • 1 tsp minced ginger and garlic
  • 1 deseeded and finely chopped red chilli
  • Salt to taste
  • 2 tbsp black sesame seeds
  • For spiced honey dipping sauce: 4-5 star anise
  • 7-8 cloves
  • 4 tbsp Honey
  • Square pieces of banana leaves or aluminium foil for steaming

How to make Steamed chicken and rice parcels with spiced honey

  1. 1. Mix the first eight ingredients in a bowl. Do not mash the rice in.
  2. 2. Bring water to boil in a pot with the steamer basket.
  3. 3. Cut about 4"x4" pieces of banana leaf or aluminium foil. Sprinkle some black sesame seeds on them.
  4. 4. Take about a tbsp of the chicken mixture, form into roughly a 1"x1.5" rectangle. Place it on the foil and sprinkle some more black sesame seeds on top. Fold the edges onto the chicken mixture and secure into tight packets.
  5. 5. Put inside the steamer and steam on low flame for about 10 minutes. Rest the packets for 2 minutes. Serve with the sauce drizzled on top and some sauce on the side.
  6. For the dipping sauce: Dry roast star anise and cloves, and grind to fine powder. Mix one tbsp of the spice mix and a pinch of salt with honey.

My Tip:

I also tried tightly rolling 2 tbsp mixture in a cling film and cooking the microwave for 2 minutes. It turns out pretty good, though not as juicy as the steamed version. And don't forget resting the parcels for 2 minutes after steaming.
