ABOUT Quiche in a cup RECIPE

Quiche is a dish typical of French cuisine which is loaded with cheese and eggs. Here I have used some left over stir fry veggies to make this cheesy pie.

Ingredients Serving: 2

Mixed stir fry veggies (any dry vegetable preparation) - 1 cup
Butter - 2-3 tbsp
Onion (chopped) - 1/4 cup
Garlic (chopped) - 1-2 tsp
Thyme - 1 tsp
White pepper powder - 1-2 tsp
Eggs - 2
Fresh cream - 2-3 tbsp
Mozarella Cheese (grated)- 1/4 cup
Cheddar Cheese (grated) - 1/4 cup
Parmesan Cheese (grated) 2-3 tbsp
Salt to taste

Instructions

Peel, wash and finely chop the onions and garlic
In a pan heat up the butter and saute the onions and garlic till translucent.
Put the mixed veggies and give it a toss.
Add thyme, white pepper powder and salt
In a separate bowl whisk 2 eggs. Add the cream and all the grated cheese saving some cheddar and parmesan for garnishing.
Add the prepared veggies to this egg mixture and mix well.
Take a medium oven proof dish or individual ramekins and grease then with a bit of butter.
Pre-heat the oven to 180 C.
Pour the egg-cheese-veggie mixture and then sprinkle some cheddar and parmesan cheese on top.
Bake for about 40 mins or till a knife or toothpick inserted comes clean.
Cool it for a few minutes before serving.
