Smoky Sweet-Potato and Rosemary Wedges

ABOUT Smoky Sweet-Potato and Rosemary Wedges RECIPE

This is a healthy snack full of fibre and the sweetness of the potato. Its a quick fix and the oven does all the work.

Ingredients Serving: 2

  1. 300 gm sweet potatoes (cut into wedges - keep the peel on)
  2. 3/4 cup finely chopped rosemary/parsley/sage
  3. 3/4 tsp smoked sweet paprika
  4. 1/2 tsp chilli powder
  5. 1 tsp honey
  6. Salt and pepper to taste
  7. 1 tbsp olive or any regular oil

Instructions

  1. Pre-heat the oven to 200 C.
  2. Mix together the parsley, paprika, chilli powder, honey, salt and pepper.
  3. Mix in the wedges and coat them well with the mixture.
  4. Now add the oil and mix well till all the wedges are coated
  5. Line an oven tray with aluminium foil and place the wedges neatly and roast them in the oven for at least 30-35 minutes.
  6. Half way through, baste (brush) the wedges with a little oil.
  7. Serve hot with a nice mayo dip.
