ABOUT Baby Potato Masala Roast RECIPE

Stir fried baby potatoes in indian spices, this semi dry preparation teams well with rotis & phulkas.

Ingredients Serving: 3

  1. 20 baby potatoes
  2. 2 tbsp roasted cumin powder
  3. 2 tbsp coriander powder
  4. 1/2 tbsp Turmeric powder
  5. 2 tbsp kashmiri chilly powder
  6. 1 tbsp raw mango/ amchur powder
  7. 1 tbsp Lime juice
  8. 1 tbsp chopped coriander leaves
  9. For the tempering
  10. 1 tbsp mustard seeds
  11. 2 green chillies, finely chopped
  12. 5-6 Curry Leaves
  13. A pinch asafetida
  14. Salt to taste
  15. Oil to cook

Instructions

  1. Boil baby potatoes, just right so that they don't break open. Peel them & keep aside.
  2. In a wok add oil, fry the baby potatoes a little, prick them & smear some salt pre-frying so the salt seeps in. Drain on kitchen napkin, keep aside.
  3. Prepare a tempering by adding oil in the wok, add mustard seeds, once they crackle add finely chopped green chillies, finely chopped curry leaves & a pinch asafoetida.
  4. Now add the potatoes.
  5. Add spice powders - chilly, turmeric, coriander, roasted cumin & dry mango powder. Be careful to ensure the spices don't burn, alternately u could make a mix these spices in about 2-3 tbsp of water & then add.
  6. Toss well so the spices coat the potatoes.
  7. Lastly add salt & lime juice Garnish with chopped coriander leaves!!
