When Satwa is cooked perfectly it can turn into a dish beyond excellence. It is a recipe of delight which no one can resist. Ingredients to make Satwa

  • 1 cup ragi seeds (finger millet)
  • 1 cup grated coconut
  • 1/4th cup jageery or more per taste
  • broken cashew nuts (optional)
  • pinch or two of salt

How to make Satwa

  1. Soak ragi overnight or for two hours. In a mixer grinder (mixie) add ragi and water and grind it to form a coarse paste .
  2. Take a thick bottomed pan and sieve this mixture adding little water at a time. Repeat this process till you get milky white liquid.
  3. Once the strained liquid turns watery, discard the ragi crumbs.
  4. Grind the grated coconut with enough water and repeat the sieving process till you get a milky liquid. Discard the coconut crumbs
  5. Now mix the coconut milk in the ragi milk and stir (because by the time you sieve the coconut, ragi mix would have settled to the bottom)
  6. Keep this pan on the stove on high flame, you have to keep stirring or immediately the mixture turns up like custard and lumps will be formed)
  7. Keep stirring, the mixture will start thickening immediately. Now add jaggery, reduce the flame, keep stirring intermittently till the jaggery is well mixed.
  8. Taste and add more jaggery or sugar as required, stir in the cashew. When the colour turns brownish transfer it to some flat dish for faster cooling.
  9. Once it is cool, cut into desired shapes .
My Tip: Qty of coconut milk can be more or less. Can substitute it with milk. For everyday consumption or for babies add more milk for liquidy texture. Can be had as a health drink.
