Chicken Piccata

Ingredients to make Chicken Piccata

  • 2 boneless chicken breasts
  • butter for greasing and brushing
  • 2 medium onion, cut into strips
  • 1 carrot cut into strips
  • 1 cup mixed bell pepper strips
  • salt to taste
  • Crushed black peppercorns to taste
  • Dried mixed herbs for sprinkling
  • red chilli flakes for sprinkling
  • Balsamic vinegar for drizzling
  • 1 tsp oil

How to make Chicken Piccata

  1. Heat a pan add oil and all veggies, saute for a min, add salt, pepper, oregano, mix well, off the flame, add 1 tsp of balsamic vinegar and toss well.
  2. Preheat oven 180 degrees celsius.
  3. Thinly slice chicken breasts horizontally and flatten them using a hammer. Halve each flattened chicken piece.
  4. Grease the baking tray with some butter and place chicken pieces. Place the sautéed veggies in the centre of each chicken piece.
  5. Sprinkle some salt, crushed peppercorns, dried mixed herbs and chilli flakes on top and drizzle some balsamic vinegar. Roll the prepared chicken pieces, brush some butter on top and drizzle some more balsamic vinegar.
  6. Put the tray in preheated oven and bake for 8-10 minutes.
  7. Serve hot.

You can add your favourite veggies to it.
