Better weather in Hyderabad egged me on to make a quick easy and calorie filled breakfast. I believe in adding everything good and tasty ..even if it adds a few calories. Go light on the next meal and relish something good now.

Ingredients Serving: 2

  1. 4slices whole wheat bread
  2. 2 cups chopped fenugreek leaves (methi) washed and drained
  3. 1 egg
  4. 1/2 cup sweet corn kernels
  5. 1 medium sized onion chopped
  6. 2 green chillies chopped
  7. 1/2 cup fresh cream
  8. 4 cheese slices
  9. Salt to taste

Instructions

  1. Heat a small nonstick pan , add 1/2tbsp cooking oil. Add half the chopped onions cook till they turn translucent .
  2. Add the fenugreek leaves and fry on a low flame for 2-3 minutes till the moisture evaporates. Add the corn kernels, stir fry adding salt.mix in the fresh cream.Take it off the fire. Stir in the green chillies and the remaining onions.
  3. Beat the egg well and mix the beaten egg into the cooked mixture .
  4. Place a large non stick tawa on the fire. Drizzle some oil.Place two slices of bread. Place a slice of cheese on each one. Layer the corn mixture on the slice. spray or drizzle oil on the slice.
  5. Turn the bread slices carefully taking care not to spill the mixture. Cook on a low flame till done.Remove on to a serving plate. Make two more with the remaining ingredients.
  6. Serve with hot and sweet tomato sauce or a mint chutney.
