No Bake Chocolate Key lime Pie

Ingredients to make No Bake Chocolate Key lime Pie

  • Unibic choco ripple cookies 3 packets
  • Dark chocolate ganache 250g
  • Gelatine 1/2tbsp
  • Zest of 2 limes
  • Key lime juice 1/8 to 1/4 cup
  • Cream cheese 100g
  • Condensed Milk 1 tin
  • Butter 3tbsp

How to make No Bake Chocolate Key lime Pie

  1. Powder the cookies in a food processor.
  2. Melt the butter and add it to the cookie powder and bring it to a dough like consistency.
  3. Roll the dough and cover the pie dish with it or put the dough into the pie dish and press it so that it expands and covers the pie dish.
  4. Refrigerate it for 2 to 3 hours. Soak the gelatin in cold water and allow it to bloom. Once its bloomed heat it till it dissolves.
  5. Add the lime juice to the condensed milk and let it sit for few minutes.
  6. Add the cream cheesel, zest and gelatin to the condensed milk mixture and stir it well.
  7. Once the cookie mix is set pour this batter into the pie dish and refrigerate till it sets. Then cover it with a layer of dark chocolate ganache. Decorate it with key lime zest.

My Tip:

For ganache chop 200g of cooking chocolate. Heat 50 to 60g fresh cream and once it heated pour it on the chopped chocolate and leave it for a minute. Then stir it till the chocolate dissolves. Reheat it a bit if the chocolate doesn't dissolve. Can also substitute whipped cream instead of ganache but it wont hold up when kept out of refrigerator.
