Aloo Matar Baingan ki Sabzi

Ingredients to make Aloo Matar Baingan ki Sabzi

  • 2 small size eggplant
  • 2 med size potatoes
  • 1/2 bowl peas
  • 1 teaspn cumin seeds
  • 1 large onion
  • 1 tomato
  • 1 tbspn crushed ginger garlic
  • 1/teaspn each of haldi; garam masala m kitchen king masala
  • 1 teaspn each of red chilli coriander n cumin pd
  • Salt
  • oil and water for cooking
  • Coriander leaves for garnishing

How to make Aloo Matar Baingan ki Sabzi

  1. Roast the brinjals on stove, dip in water fof few min and peel the skin. cut with knife into medium size pieces. Keep aside
  2. Take a pan.heat oil, add cumin seeds as it crackles add the chopped onions and cook for 2 min, then add gin garlic. and cook till raw smell goes away.
  3. Next add the chopped tomato and all the spices xcept the garam masala. Cook the spices
  4. Add the chopped potatoes and peas..mix well..add 1 cup water. cover and cook till the potatoes are almost cooked.
  5. Now add the roasted eggplant pieces along with half cup of water n garam masala pd, mix, cover and cook till water evaporates.
  6. Garnish with coriander leaves.
