Ingredients to make Zarda Rice(Sweet Rice)

  • Basmati rice 1 cup
  • Orange color 1/8th sp
  • Haldi 1/8th sp
  • Sugar 3/4cup (As per your taste)
  • Ghee 1/4 cup
  • Cashews 6 count
  • Almonds 6 count
  • Raisins 10-15
  • Cardamom 3
  • Bay leaves 2
  • Cinnamon 2
  • Clove 4
  • Cardamom powder 1/4 sp
  • Saffron 1 pinch
  • Khoya 1/4 cup

How to make Zarda Rice(Sweet Rice)

  1. Soak saffron in 1/4 cup hot water.Soak rice in a water for one hour. Drain.
  2. Heat water in a deep pan. Add haldi,orange colour and bring it to a boil. Add rice and let it come to a boil again.Reduce heat and let the rice cook till it is three fourths done.
  3. Heat ghee in a pan and saute bay leaves, cardamom, cinnamon, cashew nuts,almonds and raisins till golden. Add 1/2cup water, saffron water, sugar and bring it to a boil.
  4. Add rice cook it until the water dries up.Add khoya cardamom powder and cover the pan and cook on low flame for further 15 minutes.Mix gently and serve hot.
