Ingredients to make Nutrela Omlette rolls

  • 4 eggs
  • 1 cup soya granules (soaked and squeezed)
  • 1 medium onion finely chopped
  • 1/2 tsp ginger garlic paste
  • 1 green chili finely chopped
  • 1/8 cup green coriander leaves finely chopped
  • 1/4 tsp turmeric powder
  • 1/4 tsp garam masala
  • 1/4 tsp chaat masala
  • 1/4 tsp cumin seeds
  • Salt to taste

How to make Nutrela Omlette rolls

  1. For the filling: Heat oil in a wok and add cumin seeds. Add onions and fry till transparent. Add chilies and ginger garlic paste, saute for a minute.
  2. Add all the dry masalas and saute for half a minute. Add soya granules, mix all well and cook for five more minutes on a medium flame. Add salt and coriander leaves, mix again. The filling is ready.
  3. Beat two eggs at a time and add seasoning of your choice, I was running out of time so I added only salt and pepper. Spread it on a nonstick pan to make an omelet and spread half of the filling on it evenly when it is half cooked.
  4. Press with a spatula as we do in uttapam making and let it cook completely. Then with the help of spatula and your hand make in a pinwheel roll. Be careful while rolling as it will be hot.
  5. In the same manner, make roll of other 2 eggs also. Cut in desired thickness and enjoy with sauce or serve in curry or as a side dish for roti or rice.
  6. Add vegetables to the omlete, but they should be chopped finely otherwise rolling it will be difficult.
