Koki

Ingredients to make Koki

  • Wheat flour – 1 cup
  • Onion – one big chopped finely
  • Green chillies- 2-3 chopped finely
  • Ajwain – 1 tsp
  • Red chilli powder – 1 tsp
  • Coriander leaves – ½ cup finely chopped
  • Oil/ghee - 1/4 cup
  • Salt to taste

How to make Koki

  1. Take wheat flour in a container/vessel.
  2. Add onion, chillies, coriander, ajwain, salt, red chilli powder and 1 tsbsp of oil ..
  3. knead it properly and add enough water to form a medium soft dough.
  4. Take a ball, roll into a thick chapatti.
  5. Make Slit lightly on koki into diamonds shapes not completely cut.
  6. Fry on a griddle applying ghee on both the sides till golden brown and crispy.
  7. Serve with chilled curds or butter and of course Sindhi papad.

My Tip:

Kneading of dough with oil needs to be taken care of...it has to be mixed with fingers like bread crumbs and then added water.
