ABOUT Mang-gan Kaang-Hou (Fried Dry Yellow Peas) RECIPE

It is a popular street food in Manipur and it is quite an addictive snack which we served it with lemon tea or red tea.

Ingredients Serving: 4

  1. Yellow dry peas 2 cups
  2. Onion 1 medium size (chopped)
  3. Chinese chives- 2 tbsp (chopped)
  4. Tomatoes- 2 medium (chopped)
  5. Mustard seeds- 2 tsp
  6. Ginger - 1" long (grated)
  7. Garlic- 4 (minced)
  8. Green chillies - 2 (chopped)
  9. Red chilli powder - 1tsp (or as per taste)
  10. Hing/Asafoetida - few
  11. Cloves- 2
  12. Turmeric powder- 1/2 tsp
  13. Coriander Powder-1/2 tsp
  14. Jeera powder- 1/2 tsp
  15. Mustard oil - 2 tbsp
  16. Salt to taste
  17. For garnishing- Coriander leaves/onion/green chilli/chinese chives/toning-khok

Instructions

  1. Soak the yellow dry peas overnight.
  2. Boil it in open vessel adding some salt and 2 cloves for atleast 20 mins or until it becomes soft.
  3. Drain it.
  4. In a pan, heat mustard oil.Add mustard seed and let it crackle and add some hing.
  5. Remember not to burn the hing.
  6. Immediately add the chopped onion and cook till golden brown.
  7. Now add ginger and garlic for another 1-2 mins.
  8. Add chopped tomatoes until it becomes mushy.
  9. Then add turmeric powder, red chilli powder,green chillies( must cut it round).
  10. Add masala of your choice.I used coriander and jeera powder.
  11. After that add the boiled peas, chopped chinese chives (Maroi Naakuppi) and cook it for 15-20 mins
  12. Add salt.Mix it well.
  13. Remove from fire.
  14. Garnish it with thinly sliced onion or coriander leaves or whatever you prefer. I garnish it with Toning-khok ( Chameleon plant available in asian market) and some chopped chinese chives.
