Ingredients to make Mushroom Soya Sliders with Onion jam

  • 4 small pav buns
  • Small thin slices of mozzarella cheese
  • For onion jam- 1 large red onion thinly sliced
  • 1 tablespoon red wine OR pasta sauce
  • 1 teaspoon caster sugar
  • 1 teaspoon paprika powder
  • For mushroom sauce- 1 cup chopped mushrooms
  • 1 tablespoon butter
  • 2 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1/2 cup white wine (optional)
  • For little patties- 1 cup soaked soya granules
  • 1 green chilli finely chopped
  • 1 Tablespoon all purpose flour
  • 1 teaspoon white pepper powder
  • 1 teaspoon black pepper
  • Salt to taste
  • 1 small potato boiled and mashed

How to make Mushroom Soya Sliders with Onion jam

  1. Progress with making one element at a time. Lets start with the onion jam. Lightly grease a pan and toss thinly sliced onions in it. Once sizzling season it with salt and pepper.
  2. Once the onions turn translucent and pink; add sugar and paprika powder. Mix well, add red wine and simmer for 5 minutes until thick consistency is formed. Pasta sauce or tomato puree can replace wine here. Cool down and keep aside.
  3. To make mushroom sauce- heat butter in a pan toss the mushrooms. Season with salt and pepper. Once sizzling the mushrooms will leave moisture. Dont let it evaporate completely.
  4. Add garlic and white wine. Wine can be replaced with 1 tablespoon of fresh cream. Keep aside
  5. For soya patties- mix and mash all the patty ingredients in a big bowl and form small balls of it. Flatten a little with your palms and pan fry until both sides are golden and crispy.
  6. To assemble the sliders- heat a skillet. Crisp the bottoms of buns. Put one patty on each bun, then put a spoon of mushroom sauce, slice of mozzarella cheese and top it up with onion jam. Close them with their crowns.
  7. Heat the sliders on both sides in a hot skillet and secure them with a toothpick.

The secret to this recipe is its mushroom sauce. Once mastered it can liven up any dish any cuisine.
