ABOUT Cottage Cheese Vegetable Roulade RECIPE

While searching for the healthy pizza, I bumped into this Vegetable Roulade but I tweaked this to my taste and turned out as a very tasty and guilt free snacking and even appetizer option.

Ingredients Serving: 2

  1. Carrots 2
  2. Beetroot 1
  3. Tomato 1
  4. Green chilli 1
  5. Puff pastry for the base
  6. Cottage cheese 100 gms
  7. Cream Cheese 2 tbsp
  8. Rosemary or thyme as per choice
  9. Salt and Pepper to taste
  10. Chilli Flakes as per taste (Optional)
  11. Olive oil for drizzling

Instructions

  1. Wash and peel all your vegetables and cut into long strips.
  2. In a round pre oiled dish place your puff pastry. Put a layer of cream cheese and sprinkle herbs on top.
  3. Start with your vegetable strips, make a little rose and keep adding strips in a circular pattern.
  4. Keep them tight and work on a different colour vegetable. Use each strip to create a nice coloured mix.
  5. The cream cheese is like a glue and keeps them in place and will also absorb all the flavours and moisten the puff pastry.
  6. When you have reached the edge of the dish, drizzle with good olive oil and season with salt and pepper.
  7. Place in preheated oven 190 - 200 degree centigrade for 30 minutes until just the puff pastry edge is nice and brown, take out and cut slice with a very sharp knife.
