Vegetable Poha

Ingredients to make Vegetable Poha

  • 1 cup Poha
  • 1 cup finely chopped vegetables (Carrot, Capsicum, Beans, Onion and Potato)
  • 4 to 5 curry leaves
  • 1 tsp mustard seeds
  • 2 tsp oil
  • 2 tsp lemon juice
  • Aloo Bhujiya 1 packet
  • Whole red chillies 2 or 3
  • Red Chilli Powder 1/2 tsp
  • Haldi 1/2 tsp (Optional)
  • Salt to taste

How to make Vegetable Poha

  1. Take a pan, heat it and put oil.
  2. Add mustard seeds, curry leaves and whole red chillies.
  3. Add vegetables and saute for two minutes.
  4. Add salt, red chilli and haldi powder.
  5. Mix well.
  6. Soak the poha in water for one minute and strain.
  7. Add poha into the vegetables and mix well.
  8. Squeeze some lemon juice on top.
  9. Spread Aloo bhujiya as per taste (Optional)
  10. Serve with ketchup or green chutney.

My Tip:

Soak poha for only one minute.
