Almond nankhatai

Ingredients to make Almond nankhatai

  • 250 gm maida
  • 250 gm powdered sugar
  • 200 gm ghee ( vanaspati) at room temperature
  • few grated almonds
  • Almons essence
  • ½ tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt

How to make Almond nankhatai

  1. Cream the ghee for about 10 minutes till it become frothy and smooth. Add powdered sugar and essence then again mix them for few more minutes .
  2. Sift the maida ,baking powder,salt and baking soda then add these dry ingredients in the ghee and sugar batter. Just mix and gather to a smooth dough.
  3. Make medium sized balls from the dough.roll them evenly in your palms. slightly flatten them. press almonds on the top lightly.
  4. Place the cookies in a baking tray.keep some space between them as they expand while baking. Bake the nankhatai in a pre heated oven at 180 degrees C for 20-25 mins till light golden.
  5. Remove and place them on wire racks. When cooled, store the nankhatai in an air tight container.

My Tip:

Not to use Desi ghee as it can make your nankhatai hard. I have used Dalda semi solid form.
