Ingredients to make Sun Shaped Pull Apart Bread with Spicy Minty Filling

  • For the Tangzhong : 3 tbsp : All purpose flour
  • 1/2 cup : Milk
  • For the filling : 1 cup : Loosely packed, Mint leaves
  • Fistful : Coriander/ Cilantro leaves
  • 3 nos : Garlic cloves
  • 4 nos : Green chillies
  • Salt to taste
  • 2 tsp : oil
  • For the dough : 2.5 cups : All purpose flour / Maida
  • 4 tbsp : Sugar
  • 3 tbsp : Milk powder
  • 1 tsp : Salt
  • 3/4 cup : Water
  • 2 tsp : Instant yeast
  • 3 tbsp : Butter at room temperature
  • 1 tbsp each : Sesame seeds and Flax seeds
  • 2 tbsp : Milk for brushing

How to make Sun Shaped Pull Apart Bread with Spicy Minty Filling

  1. Start off with the Tangzhong first, In a sauce pan add milk and flour. Whisk until a lump free mixture. Now turn on the heat and cook until it's a lumpy dough like.
  2. Now remove this into a bowl and cover with a cling film touching the mixture and allow this to cool at room temperature.
  3. For the filling : Grind all the ingredients mentioned under filling section into a smooth paste, in a blender and set aside until use.
  4. For the Dough : In a deep mixing bowl add the flour , salt , sugar , yeast , butter and Tangzhong. Now knead this into a soft dough adding water.
  5. Invert the dough on to the counter top or any flat surface and continuously knead the dough for 10 minutes until it is soft and pliable.
  6. Now place the dough in a greased bowl and set in a warm place for at least an hour or until doubled in volume.
  7. Knock out the air from the dough and shape into a dough ball. Later divide the dough into four equal portions and shape into balls.
  8. Now dusting with flour roll out each dough ball into thin round discs of similar size.
  9. Now cover this with another rolled disc and continue the same one more time . Now on the last disc place a small bowl in the center and press slighly .
  10. Next cut the discs outside the bowl into an inch wider strips using a pizza cutter.
  11. Lift and twist each strip four to five times . Once all the strip are done brush their tops with milk. Now sprinkle the sesame and flax seeds in the center where the bowl was placed.
  12. Bake this beauty in an preheated oven at 180 C for 25 to 30 mins or until the top turns golden brown.
