ABOUT Sindhi Milk Koki RECIPE

Sindhi kokis can be made in many different ways. I call this receipe a treasure as my Mother in Law taght me to make this Koki. She has learnt it from her mother. This is a meal in itself as it keeps you full for longer period of time. Tastes best when eaten with boiled eggs.

Ingredients Serving: 1

  1. Wheat flour 1 big cup
  2. Black pepper powder 1/2 tsp
  3. Cold or warm milk 5-6 tsp
  4. Oil for moyan (dough) 4-5 tsp
  5. 1 tsp oil for applying while roasting
  6. Boiled eggs/half fried eggs
  7. Tea as accompaniment
  8. Salt to taste

Instructions

  1. Take 1 cup of whole wheat flour. Add salt & black pepper powder to ur taste. Add almost 4 tbsp of oil. Knead with oil. Keep mixing oil & wheat flour.
  2. Dough should be flaky. Add the warm milk to it and knead for about 3 to 4 minutes or until you get a tight dough.
  3. Knead dough hard (not like roti ka atta). It should be harder than paratha atta.
  4. Now roll it and make round koki by pressing the edges. Roll it a little thick. Now roast (seko) it on a plat pan (tawa) on low to medium flame, down side first.
  5. Check if done. flip it. Roast the other side too. Brush very little oil while roasting.
  6. Serve hot with boiled eggs/ half fry eggs & with masala tea.
