ABOUT Tomato Khejur Chutney RECIPE

Bengali style Tomato dates chutney with aroma of panch-phoran,a lovely sumptuous aromatic sweet and sour chutney .The Bengalis favourite aromatic paanch foran gives the flabours as of fennelseeds,rai,kalonji,cumminand fenugreek seeds.Ripe tomatoes are the base of thi awesome chutney.

Ingredients Serving: 4

  1. 3 ripe fresh tomatoes chopped small quarters
  2. 2tblspn Sugar
  3. 2 whole red chillies dry deseeded
  4. 3-4 dates
  5. 1tblspn raisins
  6. Some cashews optional
  7. 1-2 pieces tamarind /1tspn mango powder
  8. 1 inch piece ginger
  9. 1 green chilli optional
  10. 2tblspn mustard oil or Canola oil
  11. Paanch Foran:
  12. 1/4th nigella seeds
  13. 1/4 th mustard seeds
  14. 1/4th fennel seeds
  15. 1/4th cumminseeds
  16. 1/4th fenugreek seeds

Instructions

  1. Gather ingredients
  2. Chop tomatoes in small quarters
  3. Heat oil in a pan
  4. Add the Paanch foran as oil heats up
  5. Splutter, heat stir 1 minute
  6. Add the whole dry red chillies broken into pieces ,deseeded
  7. Stir and add the tomatoes with the ginger prices so ginger doesn't burn
  8. Stir well add salt now,cook 5-8 minutes stirring or covered on slowly till tomatoes start getting mushy
  9. Add the washed tamarind,raisins and Dates opened
  10. Add 2 tblspn sugar or as per taste less
  11. Stir on slow let sugar give the dampness and cook further
  12. If need to soften more add 1/2cup water,I didn't add
  13. Add few cashews mix well remove in a glass bowl enjoy or store for 4-5 days
