Ingredients to make Kiwi, Lime Syrup Sponge And Cream Trifle

  • Savoiardi fingers - 12
  • Whipping cream - 1 cup / 240 ml
  • sugar powdered - 2-3 tablespoons
  • lime zest - from one large fresh lime
  • Vanilla extract - 1 teaspoon
  • Fresh kiwi - 2 peeled and sliced
  • For the lime syrup
  • water - 240 ml / 1 cup
  • sugar - 50 grams / 1/4 cup
  • Fresh lime juice - 2 teaspoons (or more)
  • Vanilla extract - 1/2 teaspoon

How to make Kiwi, Lime Syrup Sponge And Cream Trifle

  1. For the syrup.
  2. Heat the water and sugar to dissolve the sugar. Cool, stir in the lime juice and vanilla.
  3. Whip the cream, lime zest, vanilla and sugar over ice till soft peaks form.
  4. Briefly dip the savioardi fingers in the lime syrup, till thoroughly moistened.
  5. Break them into bite sized pieces and place a few at the bottom of 4 dessert glasses.
  6. Spoon some cream and kiwi slices on the fingers.
  7. Repeat 2 more layers with more moistened savoiardi, cream and fruit.
  8. Chill overnight, garnish with more fresh fruit and mint just before serving.

My Tip:

A cake made with no fat at all or savoiardi fingers work best here as it soaks up the syrup really well without making the cake soggy. Bits and pieces of left over fatless sponge find their best place in a trifle!
