ABOUT Whole Wheat Salad Cake/Subwich RECIPE

Wholewheat Masala cake (inspired from Japanese salad cakes) filled with the goodness of carrots and cottage cheese with a hint of coriander chutney, frosted with blueberry yogurt and adorned with beetroot, carrot and a good sprinkle of desiccated coconut and chilli flakes, a heaven for all the salad lovers and perfect for healthy snacking.

Ingredients Serving: 4

  1. Whole Wheat Flour - 1 1/2 cup
  2. Curd - ¼ cup
  3. Oil - ½ Cup
  4. Milk - ½ Cup (adjust it while mixing the batter if it's dry)
  5. Seasoning and Salt as per taste
  6. Baking Soda - ½ teaspoon
  7. Baking Powder - ½ teaspoon
  8. 2 tbspn cottage cheese shredded finely
  9. For filling the layers: Grated carrots 1/2 cup
  10. Grated cottage cheese 1/2 cup
  11. Seasoning as per taste
  12. Mayonnaise and cream cheese 1 to 2 teaspoon each
  13. Coriander chutney - 2 tablespoons
  14. For Blueberry Yogurt - Hung curd 1.5 to 2 cups (500 ml packet is enough, hang it for 5-6 hrs.)
  15. Blueberry purée 1/2 cup

Instructions

  1. Mix together both hung curd and the puree well and keep aside.
  2. Mix all the ingredients (carrots, cottage cheese, seasoning, mayonnaise, cream cheese) for the layers filling well and set aside.
  3. Grease a 6" pan and preheat oven at 180 degrees.
  4. Now sift dry ingredients in a bowl except cottage cheese.
  5. Whisk together oil, curd n milk and fold in dry ingredients well.
  6. At last throw in cottage cheese and mix lightly.
  7. Now transfer this mix in the prepared pan.
  8. Bake at 180 degrees for 25 minutes.
  9. Cool it completely before frosting preferably in the fridge for an hour. Then slice it into 1 cm 3 portions.
  10. Take the sliced masala base and spread the chutney on the base and add the filling in the layers.
  11. Now with prepared yogurt and sliced veggies decorate it your way once all the layers are set.
  12. P.S. Time used while preparing hung curd is 5-6 hours which is idle time, hence preparation time is approximately 30 minutes combining all the slicing, grating the veggies and other preparations.
