ABOUT Pumpkin Capsicum Fry RECIPE

Vegetables are cooked in tomato ginger garlic paste and fried with walnut Chilli powder

Ingredients Serving: 4

  1. Pumpkin - 1/2 kg
  2. Capsicums - 1 cup (red,yellow and green)
  3. Tomatoes - 3 to 4
  4. Ginger - 1/4 inch
  5. Garlic - 1/2 medium size
  6. Red Chilli- 3 to 4
  7. Walnut - 7 to 8
  8. Turmeric powder - 1/4 tablespoon
  9. Chilli powder - 1 tablespoon
  10. Garam Masala - 1/2 tablespoon
  11. Butter - 2 to 3 tablespoon
  12. Salt - as per required

Instructions

  1. Grind Tomatoes,ginger and garlic into a fine paste and keep it aside
  2. Dry roast Red chillies and walnuts.Grind it into a coarse powder and keep it aside
  3. Cut the pumpkin and capsicums
  4. Tomato paste,Chilli Walnut powder and masala
  5. Heat a wok,add butter and the vegetables
  6. Now add in the masalas and tomato paste along
  7. Add 1/4 cup of water and cook in medium heat for 5 to 6 minutes
  8. Add the Chilli Walnut Powder mix once the water dries
  9. Fry in high flame for another 5 to 6 minutes
  10. And the Pumpkin Capsicum Masala is ready
