Ingredients Serving: 6

  1. For the choux pastry:
  2. 100g unsalted butter
  3. 250ml water
  4. 1 tbsp chopped thyme
  5. 200g all-purpose flour
  6. 4 whole eggs
  7. Salt, to taste
  8. For the mayonnaise filling:
  9. 1 cup mayonnaise
  10. 1/2 white onion, finely chopped
  11. 1/2 cup grated carrot
  12. 1/4 cup boiled sweet corn kernels
  13. 1/3 cup cheddar cheese or any processed cheese, shredded
  14. Salt, to taste
  15. Freshly ground black pepper, to taste
  16. Cilantro leaves, for garnishing

Instructions

  1. For the choux buns:
  2. Place the butter, salt and the water in a saucepan. Bring it to a boil and stir until the butter has melted.
  3. Immediately remove from the heat and tip in the flour and thyme.
  4. Stir with a wooden spatula, making sure there are no lumps in the preparation.
  5. Dry off the mixture on the heat, stirring with a wooden spatula, until the pastry comes away from the sides of the saucepan and forms a ball.
  6. Allow the mixture to cool slightly.
  7. Beat in the eggs, one at a time, mixing each thoroughly into the dough before adding the next. It may look a little lumpy at first – continue to beat and you’ll get a lovely smooth mixture.
  8. Using a piping bag fitted with a plain nozzle, pipe the choux buns on a baking sheet which has been slightly greased.
  9. Bake for 20 minutes at 180 degree C until golden, light and puffed.
  10. Remove from the oven and let cool.
  11. For the mayonnaise filling:
  12. In a mixing bowl take the mayo and whisk well.
  13. Add the vegetables, salt and black pepper. Mix well.
  14. Assembling the choux buns:
  15. Transfer the mayonnaise filling into a piping bag fitted with a fluted nozzle.
  16. Using a small sharp knife, cut the top off each cooked choux bun.
  17. Pipe a good amount of filling into each choux bun and top with some cheddar cheese.
  18. Bake in the oven for 2-3 minutes, garnish with cilantro leaves and serve immediately.
