Ingredients to make Wholesome and filling Three Bean Salad

  • 1 cup black/red rajma or kidney beans, soaked overnight
  • 1 cup kabuli chana/ chickpeas, soaked overnight
  • 1 cup white or regular rajma or kidney beans, soaked overnight
  • 1 green bell pepper very finely diced, almost 0.5 cms in size
  • 1 red bell pepper very finely diced, almost 0.5 cms in size
  • 1 yellow bell pepper (this is optional. I added only red and green) very finely diced, almost 0.5 cms in size
  • 1 onion very finely diced very finely diced, almost 0.5 cms in size
  • juice of 3.5 lemons
  • 2 tbsp apple cider vinegar.
  • 1 tsp olive oil or any regular cooking oil
  • 1 tbsp powdered sugar
  • 2 tsp salt
  • 1 tsp black pepper

How to make Wholesome and filling Three Bean Salad

  1. Pressure cook the three beans separately by adding a little salt to the water in the pressure cooker. Please ensure that they are tender but not mushy or pulpy. Drain all the water and let the beans cool in colanders.
  2. In a deep vessel add all the chopped veggies now pour the lemon juice, ACV, oil, sugar, salt and pepper and mix well.
  3. Now add the cooled beans and mix well. Let this cool in a refrigerator. Serve cold. Enjoy

My Tip:

Do not use regular vinegar. Use ACV only Please chop the veggies with hand and not in a chopper. Hand chopping them will help them retain their crunchiness and will serve as a nice contrast against the soft beans. Note- you can boil the beans in advance. So when the hunger pangs strike, all you need to do is quickly stir up the dressing and mix it in the boiled beans.
