ABOUT Salad with soy sauce dressing RECIPE

A healthy salad loaded with veggies and a nice tangy homemade dressing.

Ingredients Serving: 4

  1. Ingredients for salad: 2 carrots, cut into fingers
  2. 1/2 green capsicum cut into strips
  3. 1/2 red bell pepper cut into strips
  4. 1/2 yellow bell pepper cut into strips
  5. 1 small broccoli, cut into small florets
  6. 6-7 baby corns cut into strips (You can add as many veggies you like in your salad)
  7. Ingredients for dressing:
  8. 2 tsp olive oil
  9. 4 garlic cloves chopped finely
  10. 4 tbsp dark soy sauce
  11. 2 tbsp honey
  12. 1 tsp Oregano
  13. 1/2 tsp chilli flakes
  14. 1 tsp vinegar/lemon juice
  15. Salt & Pepper to taste

Instructions

  1. Boil all the ingredients for the salad for a few minutes just to partly soften and cook them. Don't over boil the veggies as we don't want to lose their crunchiness.
  2. For the dressing, heat oil in a pan. Add garlic and saute till brown and crunchy. Add all the remaining ingredients for the dressing and give everything a quick boil.
  3. Pour the dressing on the cooked veggies and toss them really well to coat them nicely. Serve the salad hot or at room temperature.
