Vegetable Oats Poha

Ingredients to make Vegetable Oats Poha

  • 1 Bowl of Rolled Oats
  • 1 medium size Onion (finely chopped)
  • 1 Medium size Tomato (Finely Chopped)
  • 1/2 Small Bowl Potatoes (Chopped)
  • 1/2 Small Bowl Carrot (Chopped)
  • 1/2 Small Bowl Boiled Peas
  • 1 small spoon grated Ginger
  • 4 tablespoons Lemon Juice
  • 1 tablespoon sugar
  • 2 tablespoons Coriander (Finely Chopped)
  • 1 tablespoon Green Chillies Salt (According to Taste)
  • Haldi powder
  • Dhaniya powder
  • 1Small spoon Mustard Seeds
  • A pinch of heeng
  • 4 tablespoons olive oil

How to make Vegetable Oats Poha

  1. Roast the Oats but they should not change colour.
  2. Heat a pan. Put the oil in it. When the oil is hot, add heeng and mustard seeds in it.
  3. When the seeds crackle, add ginger in it and sauté for a minute. Then add green chillies and sauté for few seconds more. Now add onions and sauté them for few minutes. When onion turns golden, add tomatoes in it and sauté for a few minutes.
  4. Now add potatoes and carrots in it and mix well. Now add salt and close the lid.
  5. When the vegetables are cooked, add peas in it. Add haldi and dhaniya powder and rolled oats and mix them well.
  6. Now close the lid and cook for 4-5 minutes more.
  7. Now add lemon juice and sugar and mix them.
  8. Garnish with coriander and serve it hot.
