The lush mascarpone cream cheese filing inside makes it such a joy to chew on this cookie. And why not pair it with a Mango mascarpone and dark rum parfait. After all mangoes and peaches are like marriage in heaven. My perfect summer addiction!!!!!

Ingredients Serving: 6

  1. For the Peach cookies 1.5 cups+1/4 cup - all purpose flour.
  2. 1/2 tsp - baking powder
  3. 1.5 - eggs.
  4. 1/4 cup+1.5tbsp - sugar.
  5. 1/4 cup - milk.
  6. 1/4 cup - melted butter.
  7. Zest of 2 lemons
  8. A good pinch of salt .
  9. 1tsp - vanilla extract .
  10. For the cheese filling 1 cup - mascarpone cheese 1/2 cup - cream cheese 1/2 cup - whipped cream
  11. Caster sugar for dusting. Red and yellow gel colors.

Instructions

  1. Preheat oven to 180 degree C. Sift flour and baking powder. Whisk together sugar, eggs, butter, vanilla, salt, lemon zest, milk. Fold in the flour and bring the cookie dough together with minimal kneading.
  2. Shape them like balls and press them down lightly on to a lined cookie tray. Bake them for approximately for 15 to 18 minutes turning the tray half way. The bottom should brown and the top still pale.
  3. This recipe will give u around 12 individual cookies which will make 6 peaches. Cool them down and scrape out the bottom with a sharp knife deep enough to put the cheese filling.
  4. Prepare your cheese filling by whisking the cheeses and cream together. Spoon them in to each cookie and join two together pressing them lightly. Brush your colors on them, yellow and red and dust them in caster sugar.
  5. Leave in the fridge to firm up.
