This is the season when the temperature is at highest,and kids wanted to something which to eat something cold,thought to make something healthy for them ,the idea came from tomato tomato sorbets but wanted to add some taste also which would be sweet,tangy,little spicy all in one,and made these tomato popsicles which was the combination of all these,here with tomato puree I have added little homemade coconut milk ,fresh basil and basil seeds,friends do try this recipe for hot summers ,serve to your guests something different

keep water for boiling on flame
add tomatoes in boiling water on flame
this is called blanching
after 3-4 minutes switch off flame
remove them and add cold water
now peel them
chop them roughly and make puree
add sugar while grinding puree
seive puree
now grind shredded coconut with milk
seive this coconut puree with muslin cloth
this will be our coconut milk
keep tomato puree for boiling
add red chili powder
add black rock salt
add roasted cummin seeds powder
switch off flame
keep stirring
let it cool completely
add 1/4 tsp lemon zest
add half tsp of lemon juice
stir it
soak 2 tsp of basil leaves
after 15 minutes add 2tsp of seeds to tomato pulp
add some finely chopped basil
now fill these in popsicles
keep in deep freezer for overnight
that is approximately 10 hrs
remove after ten hours and demould them
I have added wooden sticks you can keep as it is if you want
you can sprinkle chili powder,basil and basil seeds while serving
