ABOUT Tomato basil popsicles RECIPE

This is the season when the temperature is at highest,and kids wanted to something which to eat something cold,thought to make something healthy for them ,the idea came from tomato tomato sorbets but wanted to add some taste also which would be sweet,tangy,little spicy all in one,and made these tomato popsicles which was the combination of all these,here with tomato puree I have added little homemade coconut milk ,fresh basil and basil seeds,friends do try this recipe for hot summers ,serve to your guests something different

Ingredients Serving: 6

  1. 6-7 red big size tomatoes
  2. 2tsp sugar
  3. some basil leaves finely chopped
  4. 1/2 tsp red chili powder
  5. 1/2 coconut shredded
  6. 1/2 cup milk
  7. 1tsp roasted cummin powder
  8. 2 tsp dry basil seeds
  9. water to soak basil
  10. 1/2 tsp rock salt
  11. 1/2 lemon zest
  12. 1/2 lemon juice

Instructions

  1. cut tomato in plus sign
  2. keep water for boiling on flame
  3. add tomatoes in boiling water on flame
  4. this is called blanching
  5. after 3-4 minutes switch off flame
  6. remove them and add cold water
  7. now peel them
  8. chop them roughly and make puree
  9. add sugar while grinding puree
  10. seive puree
  11. now grind shredded coconut with milk
  12. seive this coconut puree with muslin cloth
  13. this will be our coconut milk
  14. keep tomato puree for boiling
  15. add red chili powder
  16. add black rock salt
  17. add roasted cummin seeds powder
  18. as soon as it boils add coconut milk
  19. switch off flame
  20. keep stirring
  21. let it cool completely
  22. add 1/4 tsp lemon zest
  23. add half tsp of lemon juice
  24. stir it
  25. soak 2 tsp of basil leaves
  26. after 15 minutes add 2tsp of seeds to tomato pulp
  27. add some finely chopped basil
  28. now fill these in popsicles
  29. keep in deep freezer for overnight
  30. that is approximately 10 hrs
  31. remove after ten hours and demould them
  32. I have added wooden sticks you can keep as it is if you want
  33. you can sprinkle chili powder,basil and basil seeds while serving
